Easy Meal Ideas

My husband is having surgery on Wednesday and will be laid up for 3 weeks. I’m in need of EASY meals, as I’ll be both doing both Mom and Dad duties, as well as coping with the sickness of this pregnancy. Crockpot recipes? Recipes with normal ingredients that most people have on hand? What are your favorites? Please share!!

  1. Bean and cheese burritos with carrot sticks, grilled cheese sandwiches with canned tomato soup, egg salad or tuna sandwiches with grapes, quesadillas with apple slices, frozen ravioli with a bagged salad, and my kids’ favorite: CEREAL!

  2. I love bbq anything. Just put chicken/beef/pork in crockpot with a bottle of bbq sauce. Yummy!! Also I just discovered canned chicken and beef at costco. They are really good for canned meat and so easy to use.

  3. Italian Beef Roast in Crockpot

    Ingredients:

    Bottle of beer (any kind you have in the fridge)

    italian seasoning (packet) I used Good Seasons

    Beef Roast (size that you need for your family)

    Steps:

    Put roast in crockpot, cover seasoing on top, pour beer in, put lid on.

    Cook in crockpot on HIGH for 6 hours.

    YUM! and so moist

    • I use this same recipe without beer, and a few slight variations. We use a 2 1/2 pound chuck roast cut into large pieces, the italian seasoning packet, a can of coke (12 oz). Cook on low in the crockpot for 8 hrs. Then take meat out and shred. Mix with BBQ sauce and serve on hamburger buns. It’s so easy and yummy!

  4. Turkey in the crockpot

    you need:

    small turkey (mine was 4 pounds)

    crockpot

    olive oil

    water

    steps:

    completely thaw frozen turkey in fridge

    take turkey out of wrappings and net

    rub with olive oil all over

    put in crockpot and add a few TBL of water

    set crockpot on low for 6 hours

  5. Raviolis

    Ingredients:
    1 pkg frozen meat ravioli
    1 jar of spaghetti sauce (i use half a jar, but we aren’t real saucy people)
    1/2 tsp basil
    1/2 tsp oregano
    1/4 tsp pepper
    1 pressed garlic clove (i just sprinkled some garlic powder on there)
    1 cup shredded mozzarella cheese
    1/4 cup finely grated parmesan cheese (i just use grated italian cheese for both the mozzarella and parmesan)

    Steps:
    Lightly oil 9×13 baking dish and set aside. Heat large pan of water to boil, add ravioli and cook for 2 minutes. Drain and rinse to prevent sticking. Drain again. Combine ravioli, spaghetti sauce, basil, oregano, pepper, and garlic. Spoon half into baking dish, and sprinkle half f othe cheese. Top with remaining ravioli and cheeses.
    Bake at 350 for 20 minutes.

  6. We like to do “cafe rio” chicken burritos in the crockpot. Just put your chicken breasts with a portion of a can of enchilada sauce and then shred (use remaining sauce to smother the burrito). I just do black beans and mexican rice inside as well with gaucamole and chips.

    I also do equal portions russian dressing and bbq sauce and pour it over chicken breasts in the crockpopt and then shred and eat over rice with steamed broccoli and rolls. You can always do easy Rhodes rolls or we love the frozen biscuits from pillsbury – they are delish!

    Breakfast is always loved at our house for dinner! You could do breakfast burritos, waffles or french toast with eggs – easy easy!

    A roast with potatoes and carrots in the crockpot is always easy and then you can use the leftover roast meat the next night to make Beef taquitos or burritos. I usually do Chipotle Beef taquitos from the Best Bites website. You should check out their website it has a lot of recipes I use and LOVE!
